    | 1. Preheat oven to 350F. | 2. Place 1 cup sugar in food processor; blend 30 sec. | 3. (or use fruit sugar). | 4. Add to softened butter and cream mixture until very fluffy. | 5. Combine flour and rice flour. | 6. Beat into batter in small portions. | 7. Turn batter out onto a lightly floured surface. | 8. Knead until smooth, adding up to 1/2 c more all-purpose flour, if needed. | 9. Press into a 15 x 9 jelly roll pan. | 10. Score into bars with a sharp knife. | 11. Prick surface with fork. | 12. Sprinkle with remaining 2 T sugar. | 13. Bake 10 minutes then lower heat to 300F and bake until golden, about 30 to 40 minutes. | 14. Cut along scored lines, cool and store in air tight container.
