    | 1. Finely chop the onions and the celery and fry in butter. | 2. When softened and translucent add diced carrots. | 3. Cube the gammon ( approx 1 x 1 cm cubes) and add to the mixture. | 4. Let simmer for approx 30 minutes till the potatoes start breaking up ( use a flowery variety such as King Edward). | 7. Take off the heat and add the cream. | 8. Season to taste. | 9.
