    | 1. Place baking sheet on bottom rack of oven. Place 6 cup popover pan on rack above baking sheet and heat oven to 400 degrees. | 2. Combine flour and salt and sift onto piece of wax or parchment paper. | 3. Warm milk in small saucepan over medium high heat until bubbles form around edges. | 4. Whisk eggs together in a large bowl until frothy, 2-3 minutes. Slowly add eggs to warm milk, whisking constantly. Gradually add flour mixture, whisking constantly until smooth. | 5. Remove popover pan from over. Use paper towel or pastry brush to carefully and completely butter inside of cups (can also use bacon grease, or fat drippings from roasted meat). | 6. Fill cups 3/4 full with popver batter,. Sprinkle each with 1/2 oz of cheese. | 7. Bake for 15 minutes; rotate pan. Bake additional 30 minutes, or until browned and puffed without opening over door. | 8. Remove pan from oven and invert to remove popovers. Serve immediately. | 9. Reheat popover pan in over, re-greasing as necessary, and bake remaining popovers as above. | ---------------------------------------------------------------------------
