    | 1. Heat a large pan with the oil and brown the meat (you may need to do this in two batches). Once browned remove to a warm plate and set aside. Add the onions, shallots and mushrooms to the pan and cook for 5 mins stirring occasionally. | 2. Return the meat to the pan and add the broth, tarragon and bay leaf and season to taste.
