Beat eggs and remaining milk in bowl. | 9. Heat oil and remaining butter in skillet. | 10. Add eggs and stir lightly, until eggs are light and fluffy, about 2 minutes. | 11. Season to taste with salt and freshly ground coarse black pepper. | 12. Spoon eggs into pastry shells. | 13. Top each with 3 tablespoons of Mornay sauce. | 14.
