    | 1. Place the dried fruits in a bowl, pour over the hot tea and add the juice and zest of the orange. | 2. Cover with plastic wrap, then leave for 4 hours or better still, over night. | 3. Heat the oven to 350 degrees F. | 4. Grease and line with parchment paper the base of a 2 lb. loaf tin. | 5. Beat together the butter and brown sugar until creamy, then beat in the egg, followed by the flour. | 6. Carefully stir through the fruit mixture. | 7. Spoon the mixture into the pan, then smooth over the surface with the back of the spoon. | 8. Sprinkle all over with a thick layer of demerara sugar. | 9. Bake for 1 hour or until a skewer inserted into the centre comes out clean. | 10.
