Celery and Onion Mashed Potatoes

    | 1. Heat a medium saucepan over medium-high heat. | 2. Add 1 tablespoon of the butter, then the celery and onions. | 3. Sauté until the vegetables are golden, about 5 minutes. | 4. Drain the potatoes and return the pan to a medium heat. | 10. Stir in the cooked vegetables, 3 tablespoons of butter and milk. | 11. Mash lightly with a masher or fork. | 12. Add more salt, pepper and taste for seasoning. | 13.
