    | 1. Place the red wine vinegar in a large bowl. | 2. Slowly add the olive oil and whisk continually. | 3. If dressing tastes too tart, whisk in water a tablespoon at a time. | 4. Season with salt and pepper. | 5. Once dressing is emulsified place to one side. | 6. In a large salad bowl toss the lettuce, tomatoes, olives, cucumber and dressing. | 7. Divide the salad between 4 plates. | 8. Place the 4 pieces of feta on top of each salad. | 9.
