    | 1. Warm saute pan with olive oil. Saute bell pepper, onion, sundried tomatoes, olives, garlic, salt and pepper in saute pan until onion and peppers are soft (about 8 min). Add thawed potatoes (follow directions on bag of Simply Potatoes for thawing instructions) and oregano (until potatoes are heated through). Add spinach and cook for 5 minutes until wilted. Remove pan from heat and add crumbled goat cheese and mix. | 2. In separate pan, scramble eggs with a splash of milk. Season with salt and pepper. | 3. Add scrambled eggs to top of hash.
