    | 1. Place the ground lamb in a large bowl. | 2. In a small saute pan over high temperature, heat about 1 teaspoon of the olive oil until very hot. Add the onion and garlic and saute until they begin to give off their aroma, 2 or 3 minutes. Set aside to cool. | 3. Add the cooled onion mixture, bread crumbs, rosemary, cayenne sauce, and salt and pepper to the ground lamb and mix thoroughly. Form into 4 burgers. | 4. In a medium saute pan over high temperature, heat the remaining olive oil until smoking hot. After 1 minute, turn the heat to medium. Cook the burgers about 3 minutes on each side for medium, or as long as you prefer. | 5. Top with a mild fresh goat cheese or your favorite cheese.
