    | 1. Preheat oven to 350 degrees F; line 9x9 inch baking dish with parchment paper or aluminum foil and also a shallow baking pan. | 2. In a large bowl, combine egg, yogurt,onion, bread crumbs, oregano, mint, lemon zest, garlic and 1/2 teaspoon salt; add beef or lamb and feta, lightly mix to combine. | 3. Spread mixture into prepared baking dish; lightly press to form an even, smooth top. | 4. Arrange tomato and lemon slices, alternating, on top of loaf. | 5. Bake 45 to 50 minutes to an internal temperature of 160 degrees F. | 6. Let stand 10 minutes; spoon off fat. | 7. Meanwhile, Combine potato slices with olive oil and place on prepared baking pan; bake at 350 degrees F for 45 minutes (same time as meatloaf). | 8. Remove from oven and season with salt, pepper, and fresh rosemary. | 9. Cut meatloaf in squares to serve, topped with additional lemon wedges, chopped cucumber, and mint. | 10.
