    | 1. Toss chicken cubes in 4 Tbsp olive oil, sprinkle with Greek seasoning and let marinate at least two hours. I usually marinate overnight or use my Food Saver to help the process along! | 2. Cut dried tomatoes into thin (not quite julienne) strips, soak in another 4 Tbsp olive oil at least two hours, again can be left overnight. Half kalamata olives and set on paper towel to drain. | 3. Once everything is marinated and soaked, you are ready to cook --. | 4. Heat remaining 2 Tbsp olive oil in large skillet. Add chicken and cook until chicken is almost done, about 10 minutes. | 5. Add sun dried tomatoes, cook an additional 3-5 minutes. | 6. Add kalamata olives, stir until heated through. | 7. Last, add feta cheese, cover pan until cheese just begins to melt. | 8. Serve either with or over pasta of your choice (we usually serve with penne pasta, but that's our favorite shape!). | 9.
