    | 1. Rub the chicken breasts with the herbs. | 2. Peel and finely chop garlic and onions. | 3. Chop the courgettes, cut the peppers in half and remove seeds and white pith. | 4. Cut into wide strips. | 5. Heat 2 tbsps oil in a large pan, and fry the chicken for 8 minutes. | 6. Turn and fry for another 5 mins. | 7. Remove from pan and keep warm Add remaining oil, onions, garlic, peppers and courgette to the pan. | 8. Cook until vegetables soften. | 9. Add tomatoes with the juice, and season. | 10. Cover nad simmer for 10 minutes. | 11. Stir in the freshly chopped parsley and put teh chicken on top. | 12.
