    | 1. Cut tenderloin into two equal steaks. | 2. Drizzle balsamic vinegar on both sides. | 3. Sprinkle salt, sugar and pepper on both sides. | 4. Let rest at room temp for 10 minutes. | 5. Preheat heavy pan on medium high. | 6. Preheat oven to 350°F. | 7. Drizzle steaks with olive oil. | 8. Sear steaks in pan 1-2 mins per side (depending on thickness of steak). | 9. Place tomatoes equally on top of steaks. | 10. Slice gorgonzola into two equal pieces and place on top of tomatoes and steak. | 11. Place pan with steaks into oven and bake 8-10mins until cheese melts. | 12. Remove from oven and pan and plate them. | 13. Let rest 5 minutes for juices to settle. | 14. Cooking times will vary depending on how thick your steaks are and your oven. | 15. Add your favorite bernaise sauce on the side and serve. | 16. Enjoy! | 17.
