    | 1. On medium heat, sautee garlic and onions in the olive oil until onions start to carmelize. (Be careful not to burn the garlic). | 2. After the onions are carmelized, add the sliced potatoes and sautee until cooked through. (About 5-10 minutes. Be sure to add more oil as needed so that potatoes do not stick in the pan. A non stick pan can be used as well). | 3. When potatoes are almost cooked, add the sliced bell peppers and cook until tender. | 4. Add the beaten eggs to the pan and "scramble" the eggs, making sure to cook thoroughly, mixing in with the pepper- potato mixture. | 5. Add the sausage links and cook until no longer pink. (5-10 minutes). | 6. If desired sprinkle with cheese before serving. | 7. Ingredients can be deleted or added according to tastes or what is in the pantry. I have made this dish with/without the eggs or with/without the potatoes, etc. | ---------------------------------------------------------------------------
