    | 1. Put the water on to boil for the pasta. | 2. Fry the sausage slices over medium heat in a large skillet (you need room for the sauce later). | 3. Remove the sausage from the pan (leave the grease). | 4. Fry the sliced onion until translucent. | 5. Lower the heat to medium low. | 6. Water should be boiling - add the pasta. | 7. Add the fresh garlic and fry for a minute. | 8. Add the spaghetti sauce, tomato paste, cayenne and simmer. | 9. Add slightly beaten eggs to the ricotta. | 10. Mix in the spinach and 1/2 cup parmesan. | 11. Pasta should be slightly firm. | 12. Shred the cheese. | 13. Fill a 13 x 9 x 2 inch baking pan half full with the drained pasta. | 14. Stir in the sauce (but leave about one cup for later). | 15. Sprinkle 1/8 cup parmesan across. | 16. Sprinkle 1 cup mozzarella across. | 17. Spread out the sausage evenly across. | 18. Spread the spinach mixture across. | 19. Sprinkle 1 cup mozzarella across. | 20. Spread the rest of the sauce across. | 21. Bake at 350 degrees for 30 minutes. | 22. Add any remaining parmesan and mozzarella and then cook until it is melted (mine started to brown). | ---------------------------------------------------------------------------
