    | 1. Put the watermelon flesh in a liquidiser and blend until smooth. | 2. Sieve. | 3. Combine sugar and water to make a syrup. | 4. Stir over low heat until the sugar dissolves. | 5. Add some rind and let it boil for 5-8 minutes. | 6. Allow to cool. | 7. Strain the syrup and add to the fruit puree. | 8. Stir well. | 9. Pour into a tin and freeze for 20 minutes. | 10. Stir the ice crystals into the liquid and freeze again. | 11. Repeat the process every 20 minutes until the liquid is evenly frozen into crystals. | 12.
