    | 1. Preheat oven to 500 degrees F (260 degrees C). | 2. Heat 2 tablespoons olive oil in a skillet over medium heat; cook and stir potatoes until browned and crisp, about 15 minutes. Heat 1 tablespoon olive oil in a nonstick skillet over medium heat; cook eggs, 2 to 4 at a time if necessary, until whites are set but yolks are still soft, about 2 minutes per side.
