    | 1. Put enough fresh washed tomatoes in an instapot (or some other electric pressure cooker) to fill about 2/3 full. I use whatever I have, which currently is Roma (paste tomatoes) from my garden. I suspect Romas are the best since they are specifically for sauce, but I have added other types to the mix as well. No need to cut. | 2. Add the onion cut into chunks (quarters or so). | 3. Add garlic and all the other ingredients to the pot. | 4. Put the lid on and close the vent. Push the 'manual' button and adjust to high pressure and adjust time anywhere from 20-30 minutes. | 5. When the pot beeps, you can leave until the pressure reduces naturally or use the vent to let the pressure out if you need the sauce quicker. | 6. Use an immersion blender to blend all the chunks together into a nice sauce. | 7. Leave the lid off and hit the sauce button, adjust to medium. Saute for 10-15 minutes to thicken the sauce and serve as desired. | ---------------------------------------------------------------------------
