    | 1. In a large bowl combine the tomatoes, green onion, garlic, and white beans plus the egg yolks till well blended. | 2. In another bowl beat the egg whites till soft peaks form. Fold egg whites into the tomato mixture along with the cheeses, spinach, lemon zest and pepper. | 3. Pour into an oiled shallow 2 quart baking dish. | 4. Bake at 350 degrees 15 minutes or till set. | 5. Cool completely then cut into small squares and place on a platter. Garnish the platter with basil. | 6.
