    | 1. Generously salt and pepper salmon fillets. Lightly grease grill with cooking spray or oil. Place the egg yolks in a saucepan. Cut the butter into pieces and add to the saucepan. Heat over medium-low heat while whisking the melted butter and egg yolks together. Continue whisking until the mixture turns lemony-colored and thick. Remove from the heat and stir in lemon juice. Place in a container and refrigerate until firm or serve immediately as a sauce. Grill the salmon about 5 minutes on each side or until done.
