    | 1. Line an 8-inch square pan with foil, allowing foil to extend over sides of pan. | 2. Spray with no stick cooking spray. | 3. Melt chocolate in microwave, as directed on package of chocolate. | 4. Beat cream cheese in large bowl with electric mixer until smooth. | 5. Gradually beat in sugar on low speed until well blended. | 6. Add melted chocolate, extracts and food color; mix well. | 7. Stir in chopped pistachios. | 8. Spread evenly in prepared pan. | 9. Garnish with additional pistachios, if desired. | 10. Refrigerate at least 1 hour or until firm. | 11. Use foil to lift out of pan onto cutting board. | 12. Cut into 25 (1 1/2-inch) squares. | 13. Store in refrigerator. | 14.
