    | 1. Melt butter or oil in fry pan. | 2. Brown chicken breasts and remove to plate. | 3. Deglaze pan with chicken broth. | 4. Add vinegar, sugar, cajun spice and pepper. | 5. Simmer on medium heat for a minute or two. | 6. Drain pineapple and reserve tidbits. | 7. Set aside. | 8. Put cornstarch in pineapple juice and stir. | 9. Add to fry pan to thicken chicken broth. | 10. Stirring often. | 11. At this point put chicken back in pan,cover and simmer for 10 minutes. | 12. Turn chicken and add celery. | 13. Stir. | 14. Simmer another 5 minutes and add peppers and snow peas. | 15. Stir. | 16. Simmer another 5 minutes till vegetables are tender crisp. | 17. Stir in reserved pineapple. | 18. Serve over white or brown rice. | 19. Garnish with sliced green onions and sprinkle with soya sauce. | ---------------------------------------------------------------------------
