    | 1. A tip: I like to cook the bacon slightly and drain some of the fat before I add it to the baking dish. About one to two minutes in the microwave is enough. | 2. Preheat oven to 375 deg F. | 3. Remove beards from mussels and rinse well. | 4. In a large covered saucepan, cook mussels in small amount of boiling water for 6-8 mins, or until shells open. Cool until you can handle them. | 5. Remove meat from shells and place in buttered 6-cup baking dish or pan. Season with salt and pepper. | 6. Sprinkle with onion and lemon juice. | 7. Cover with chopped bacon and sprinkle with cheese. | 8.
