    | 1. Core apples and cut into eighths. | 2. Peel if desired; it's not necessary. | 3. Place in large, heavy pot with the lemon slices, cinnamon sticks and water. | 4. Cover and bring to a boil. | 5. Reduce heat and simmer, stirring often. | 6. Cook until apples are soft, 15 minutes or so. | 7. Remove lemon and cinnamon; stir in sugar. | 8. Put mixture into food processor and pulse until smooth. | 9. Taste and add more sugar if you like. | 10.
