    | 1. Heat olive oil in stock pot over medium high heat. | 2. Add chopped onion, celery, and carrots and cook until they begin to to soften slightly. | 3. Add vegetable stock and ham bone. Add package of Idahoan Roasted Garlic Flavored Mashed Potatoes and stir thoroughly. | 6. Mix in chopped parsley and adjust seasoning if necessary.
