    | 1. Heat oil and butter in a 10 to 12 inch skillet until almost smoking. | 2. Fry steaks in pan, a few at a time, for about 3 minutes on each side, adding more oil and butter as needed. | 3. Season each steak with salt and pepper and set aside, keeping warm. | 4. Lower heat and add red wine and dessert wine. | 5. Stir with residue left in pan. | 6. Add garlic and cook for 2 minutes. | 7. Add tomato paste and water. | 8. Cook until sauce is quite thick. | 9. Combine mashed potatoes and yams(or sweet potatoes) ina 2 qt saucepan and beat thoroughly. | 10. Season the potato mixture to taste. | 11. Spread the potato mixture on a large platter. | 12. Arrange the steaks on the potatoes. | 13. Pour the sauce over the steaks. | 14.
