In a medium bowl mix the curry, garlic and peanut (satay) sauce and stir to thoroughly blend. Set aside. | 4. Heat the olive oil in a large non-stick skillet then add the potatoes, cooking over medium heat for about 10 minutes. Do not stir or turn potatoes over. | 5. Turn the potatoes over and add the peanut sauce, stirring to coat all the potatoes. Cook for an additional 7-8 minutes until they are soft and tender and peanut sauce is bubbling. | 6.
