    | 1. Place the coriander, cumin, curry and turmeric in a dry skillet and toast over low heat until fragrant, about 30 seconds. | 2. Transfer the toasted spices to a large bowl with the coconut milk, olive oil, vinegar, mirin, honey and a hefty pinch of salt and pepper. Whisk all the ingredients until well combined. | 3. Add the cubed chicken and toss to coat well with the marinade. | 4. Marinate in the refrigerator for 1 to 2 hours. | 5. Prepare your gas or charcoal grill to medium-high heat. Loosely thread the marinated chicken onto the skewers and season with salt and pepper. Grill for about 4 minutes per side, or until browned and cooked through. | 6.
