    | 1. Preheat oven to 200 degrees F. | 2. Transfer sweet potatoes to a large bowl. Add onion, raisins and flour. | 3. In a small bowl, combine eggs with curry powder and salt. | 4. Add egg mixture to potato mixture and mix with your hands. | 5. In a large skillet over medium-high heat, warm 2 tablespoons olive oil. | 6. For each latke, drop 1/3 cup of mixture into skillet and fry, pressing with a spatula to flatten. Cook until golden brown, 2-3 minutes per side. | 7. Keep warm in 200F oven until ready to serve. | 8.
