    | 1. Whisk together the egg yolk, sugar and lemon rind until thick. | 2. Add 3 tbsps. | 3. lemon juice. | 4. Place over a pan of simmering water until thick- like mousse. | 5. Remove from heat. | 6. Whisk occasionally until cold. | 7. Soak the gelatin in the remaining lemon juice in a bowl. | 8. Place the bowl over a pan of hot water. | 9. Stir until dissolved. | 10. Whip the cream until softly stiff. | 11. Whisk the egg white until stiff. | 12. Fold half the cream into the mousse with the gelatin, honey and whisked egg white. | 13. Transfer to a glass bowl. | 14. Decorate with the remaining whipped cream, cherries and mint leaves. | 15. Refrigerate for 20 minutes. | 16.
