    | 1. Combine dashi, shoyu, mirin and vinegar in a pan and bring to a simmer. | 2. Remove from heat and store in refrigerator to chill. | 3. Bring litre of water to boil. | 4. Add soba noodles. | 5. Cook for 4 mins. | 6. Drain noodles using a colander. | 7. Rinse with cold water and wash noodles, making sure all the starch is rinsed off. | 8. Cut nori sheet in four. | 9. Take one quarter and slice thinly. | 10. Place slices of nori on noodles. | 11. Slice spring onion and place on a small dish. | 12. Put wasabi paste on another small dish. | 13. Serve noodles on a bamboo mat traditionally, or just use a plate, with the dipping sauce and condiments in separate bowls. | 14. Combine desired condiments into the sauce. | 15.
