    | 1. Preheat oven to 200° Celsius. Lightly dust plain flour over a flat baking tray. | 2. Sift SR flour into a large bowl and stir in brown sugar and mixed spice. | 3. Rub butter into flour mixture using fingertips, until mixture resembles breadcrumbs. | 4. Stir in apple. | 5. Make a well in the centre and add 1 cup of milk. Mix with a flat-bladed knife until mixture forms a soft dough (add more milk if required). | 6. Turn dough onto a lightly floured surface and knead gently until smooth. Don't knead too much or damper will be tough. | 7. Shape dough into a 19cm (7.5 inch) round. Brush top with egg white and sprinkle with demerara sugar. | 8. Place onto prepared tray and bake 30 mins or until golden and cooked through. | 9. Stand on tray for 5 minutes. | 10.
