    | 1. Preheat oven to 200 degrees celcius. | 2. Grease a 12 hole muffin pan. | 3. Sift flour, baking powder and cinnamon into a bowl, then stir in brown sugar. | 4. Melt butter and lightly beat egg. | 5. Combine butter, egg and milk. | 6. Peel, core and grate apples and add straight into the wet mixture. | 7. Make a well in the centre of dry mixture, pour in wet mixture and fold in very gently until combined (do not overwork batter). | 8. Pour into muffin pan until each hole is approx 3/4 full. | 9. Bake for 15 mins, or until golden on top. | 10. Rest in the pan for a couple of minutes then turn onto a wire rack to cool. | 11.
