    | 1. Preheat oven to 180°C Put sugar for syrup in a small pan with water and lemon peel and set pan over a gentle heat. Stir off and on until dissolved then bring to the boil and boil for 1 minute. Set aside to cool. | 2. Whiz butter and sugar for filling in a food processor. Add the ground almonds and blend until smooth. With machine running, drop in the egg and blend. | 3. Dunk croissants in the syrup, coating them all over, then split with a sharp knife. Spread a little almond filling inside each croissant, then spread some more on the top. Put croissants on a baking tray lined with baking paper and scatter over almonds.
