    | 1. Sauté onions, meat, and garlic until onions are clear. | 2. Drain any fat. | 3. Add tomatoes, spices, salt and pepper and simmer 30 minutes. | 4. Add diced chilies. | 5. Cut tortillas into fourths. | 6. In a 13x9x2-inch pan, layer half of tortillas, overlapping to cover the bottom of pan. | 7. Cover with half the meat sauce. | 8. Sprinkle with half the cheese. | 9. Repeat layers, beginning with tortillas and ending with cheese. | 10. Bake at 350°F about 30-45 minutes, or until bubbling and cheese has melted and started to turn golden. | 11. Remove from oven and spread with a layer of sour cream. | 12. This freezes well--do all but add sour cream topping and freeze. | 13.
