    | 1. Brown ground beef, diced pepper and onion until done. | 2. Drain if necessary. Add cooked rice if using. | 3. Take 1/12 of beef mixture and put in center of 1 tortilla - fold left side over and roll up tortilla (don't bother closing either end). | 4. Place in greased 9 x 13 pan. | 5. Continue for other 11 tortillas (squish 'em in there, they'll fit!). | 6. Pour and spread the hottest salsa you can stand over the top of the tortillas. | 7. Top with cheese. | 8. Bake at 375 for 30 minutes. | 9. Serve with additional salsa and sour cream. | 10. Even better the 2nd day! | ---------------------------------------------------------------------------
