    | 1. Heat a skillet over medium high heat. | 2. Meanwhile, sprinkle cheese, chicken- if using, and onion on top of one tortilla. Then sprinkle a little more cheese on top. Top with another flour tortilla to make a sandwich. | 3. Spray hot skillet with cooking spray. Lay tortilla sandwich in pan and cook til browned. | 4. Flip gently to other side and cook until browned. Remove to cutting board and let rest for about 2 minutes before cutting. | 5.
