    | 1. Heat 1 teaspoon of olive oil in a large skillet over medium-high heat. | 2. Add chicken saute 5 minutes or till done. Then remove chicken from pan. | 3. Heat remaining 1 teaspoon of olive oil and add onion, peppers, garlic and thyme and saute' about 4 minutes. | 4. Slice a chipotle pepper into small strips and add that and the all the adobo sauce to the pan and mix well and cook for 1 minute. | 5. Add chicken back to the pan and cook for 1 minute stirring frequently. | 6. Remove from heat add cheese, stirring until it melts. | 7. Place in your favorite roll or taco shell and enjoy! | 8.
