    | 1. Heat the olive oil in a non-frying pan and fry the breadcrumbs until golden and beginning to crisp. Remove and set aside. | 2. Fry the scallions in oil until soft and golden. Add the chopped pepper, chili, ground turmeric and garlic. Cook, stirring, for 5min. | 3. Add the beans, mayonnaise, two-thirds of the breadcrumbs and the basil. Season, mash roughly with a fork, then press mixture down to flatten. Sprinkle over remaining breadcrumbs. | 4.
