    | 1. In a large pot (5+ quart), lightly sear chicken pieces (w/ skin) in olive oil, 1-2 minutes on each side. | 2. Salt and pepper lightly. | 3. Add diced onion, celery and carrots. | 4. Cover with water and bring to a boil. | 5. After first 5 minutes of boiling skim off foam and excess oil. | 6. Cover and simmer for 1 hour. | 7. In medium sauce pan, combine tomatoes, garlic, cumin, oregano, thyme, coriander and jalapenos. | 8. Cover and simmer for 20 minutes. | 9. Remove from heat and allow to cool while chicken cooks. | 10. Remove chicken from pot and set aside to cool. | 11. Remove celery, onion and carrots from stock and add to tomato mixture. | 12. Puree vegetable mixture in a blender or food processor. | 13. Add puree to chicken stock. | 14. Salt and Pepper to taste. | 15. Simmer covered for 1 hour stirring occasionally. | 16. Shred chicken and add to bottom of soup bowls. | 17.
