    | 1. Mix all spices for the coffee spice rub in a small bowl. | 2. Rub the spice mixture all over the beef roast taking care to really rub it in well! | 3. Heat 1/2 Tbsp coconut oil in a large skillet over Medium-High heat. Make sure the oil is hot or you will lose your spices. | 4. Using tongs, place the roast into the hot skillet and sear for 3-4 minutes on each side until a nice crust starts to form. Remove from pan and set aside. | 5. Place sliced onions in the bottom of a crock pot. | 6. Place seared roast in the slow cooker on top of the onions. | 7. Add the water, cover and cook on high for 5-6 hours or on low for 7-8 hours. | ---------------------------------------------------------------------------
