    | 1. Rub the roast all over with salt and pepper. | 2. In a large casserole or Dutch oven, heat oil. | 3. Brown the meat on all sides; remove, and set aside. | 4. Melt the butter in the same Dutch oven. | 5. Add the onions, and garlic (if using) stirring for about 10 minutes, or until soft. | 6. Place the browned meat on top of onions in the casserole. | 7. In a small bowl, combine the sugar with the vinegar; pour over meat. | 8. Cover, and bake in 300 degree oven for 2 hours, basting occasionally with pan juices. | 9.
