    | 1. Heat olive oil in pan. Cut beef into 1" cubes, add to hot oil. Season beef cubes with sea salt and freshly ground pepper to taste. | 2. While beef is browning, coarsely chop vidalia onion and put in crockpot. Add cleaned mushrooms, bay leaves, thyme, vegetable and beef broths. | 3. Once beef is fully cooked, dump it into the crockpot, juices and all. | 4. Add beer, cover, and cook on HIGH for 3-4 hours. | 5.
