    | 1. Heat 1 tablespoon of peanut oil in a wok. | 2. Add eggs and swirl to coat the bottom of the wok. | 3. Cook for 30 seconds and then gently roll up. | 4. Remove from heat and when cool enough, slice. | 5. Heat remaining oil in the wok. | 6. Add beef and stir-fry until browned. | 7. Add garlic and cook for a further 30 seconds. | 8. Add noodles, fish sauce, oyster sauce and gai laarn. | 9. Stir-fry for 2-3 minutes or until noodles are soft and gai laarn is cooked but crisp. | 10.
