    | 1. Cut the apples into quarters. | 2. Remove the cores and stems but leave the skin intact. | 3. Place the apples in a large slow cooker. | 4. Trim off the ends of the shallots and peel off the skins. | 5. If the shallots have more than one section, separate them. | 6. Place the shallots in the slow cooker. | 7. In a large skillet, melt the butter with the oil over medium heat. | 8. Pat the pork pieces dry with paper towels. | 9. Brown the pork in batches, about 20 minutes total. | 10. Add the pork to the slow cooker. | 11. Sprinkle with salt and pepper to taste. | 12. Pour off the fat in the skillet. | 13. Add the apple cider and vinegar and cook, stirring, until the liquid comes to a simmer. | 14. Stir in the broth, scraping the bottom of the pan. | 15. Pour the liquid over the pork, shallots, and apples. | 16. Cover and cook on LOW for 8 hours, or until the pork is very tender. | 17. Just before serving, remove the pork, apples, and shallots with a slotted spoon and place in a large bowl. | 18. Cover and keep warm. | 19. Skim the fat from the juices in the cooker. | 20. Stir in the crème fraiche and taste for seasoning. | 21. Pour the sauce over all; serve hot. | ---------------------------------------------------------------------------
