    | 1. Generously butter a rectangular baking dish. | 2. To make boursin cheese with black pepper: Press garlic and salt to make a paste. Combine with cream cheese, butter, parsley and pepper until smooth. | 3. In heavy saucepan heat cream, boursin cheese, shallots and garlic over medium heat. Stir constantly until cheese melts. | 4. Preheat oven to 400. | 5. Arrange half of the potatoes in baking dish in slightly overlapping rows. Season with salt and pepper then pour half of the cheese mixture over the potatoes. Sprinkle with chives then repeat layers with remaining potatoes, salt, pepper and cheese mixture. | 6. Bake uncovered one hour until potatoes are tender but do not overcook. | 7. Sprinkle with parsley and serve. | 8. Cooking Note: Towards the end of cook time, should the dish become too brown, cover with foil and continue to cook until tender. | ---------------------------------------------------------------------------
