    | 1. Preheat oven to 350ºF. | 2. Heat oil in a large pan, with a lid, over medium heat. | 3. Sear steaks for 1 minute on each side. | 4. Remove me to a plate. | 5. Add onion to the pan and cook until browned, about 5-7 minutes. | 6. Stir in the flour and cook for 2-3 minutes, stirring often. | 7. Add wine, stock, tomato paste, mustard, and tarragon, and stir until smooth. | 8. Heat to a simmer, and add steaks. | 9. Cover and braise in the oven for 1-1/2 hours, or until tender. | 10. Remove steaks to a serving dish, and skim grease from the top of the sauce. | 11.
