    | 1. Preheat oven to 375~F. | 2. Trim ends of zucchini. | 3. Cut zucchini in half lengthwise. | 4. Carefully scoop out centers leaving 1/4-inch thick shells. | 5. Chop pulp (makes about 1 cup); set aside. | 6. In a large skillet brown ground beef; drain fat. | 7. Stir in reseved zucchini pulp, bread crumbs, Parmesan cheese, oregano, salt, pepper, 1/2 cup marinara sauce and egg; mix well. | 8. Place zucchini shells in a shallow baking pan. | 9. Spoon meat mixture into shells. | 10. Pour remaining marinara sauce over and around zucchini. | 11. Cover and bake until zucchini shells are tender, 30 to 35 minutes. | 12. Sprinkle with mozzarella cheese. | 13. Bake, uncovered, until cheese melts, about 5 minutes. | ---------------------------------------------------------------------------
