    | 1. Preheat oven to 400°F. | 2. Without peeling potatoes, boil for 10 minutes. Drain and peel. Using teaspoon, scoop out a deep hole for stuffing. | 3. In medium bowl, add skinned sausage, bread, 1 tablespoon of the butter, parsley, stock and egg yolk. Mix together well and carefully stuff into potatoes. | 4. Assemble potatoes in greased baking dish, dot with butter, sprinkle with salt and pepper and bake 15 minutes. | 5.
